Garden Fresh Pasta Sauce

Normally on Monday I write my Make It Yourself Monday posts. This paticular Monday though, I am on vacation with family, so there is no making much of anything fancy over here. We are all about easy, semi-healthy, but fully delicious food. My homemade bladda bladda bladda will have to wait until I get home.

I did however, get the opportunity to scour my mother’s garden. It was overflowing with the most beautiful cherry tomatoes I have ever seen. She was at a loss with what to do with all of them. They would certainly go to waste if I didn’t dive in.

 

 

Luckily for us, we had a large family gathering coming up. This was the perfect opportunity to use the 100+ juicy, red tomatoes that were calling our names.

This is a simple, and fresh, and oh so tasty pasta sauce recipe. Add meat, or don’t. You do you boo.

Instructions
  1. In a large deep sautéed pan or pot, heat olive oil over medium heat.
  2. Sautee onion and garlic until garlic is fragrant and onion starts to soften.
  3. Place whole cherry tomatoes in pan and stir so they are coated in oil. Keep turning tomatoes and allow them to start bursting.
  4. Allow all of the tomatoes to burst and start creating a sauce. Add in balsamic, tomato paste and butter and mix into tomatoes.
  5. Add in the Italian seasoning and salt and pepper.
  6. Allow the sauce to combine with the spices and then place whole mixture in a high speed blender. Blend for 2-3 minutes.
  7. Return blended sauce to pan and let simmer on low for 25-30 minutes.
  8. Add in cooked ground beef, or leave as is. Put on top of steamed broccoli or your favorite organic pasta noodles. Top with parmesan cheese!
